This incredible ingredient is not actually a pepper like the fruit (Capsicums) or a vine like we get black pepper from (Piper Nigrens) – these grown on the Chinese Prickly Ash tree.
The outer seed coating will turn from green to dark red and split open to expose small black seeds when ripe.
Separate the black seeds from the red coating (the redder the better) and use whole or ground.
Presents a wonderful numbing sensation combined with citrus and floral notes.
Intrinsic to Szechuan (or Sichuan) cuisine!
